Coming up with new recipe ideas and making something my own is certainly fun for me. Sometimes the recipes come out okay, but sometimes they come out even better than I expected! And that my friends, is what happened here with my Biscuit Brunch Pie recipe.
I was inspired by shepherd’s pie. I wanted to try and create the same thing with breakfast ingredients because I LOVE breakfast foods, Brunch is my jam…pun intended!
The process was pretty easy. I knew I wanted to use bacon, but any breakfast meat would work like sausage etc. Make it your own! I used turkey bacon because that’s what I had on hand and I hate going to the grocery store if I don’t have too.
Biscuit Brunch Pie
Ingredients

4 Medium Russet Potatoes

4 Organic Eggs
-
1 White or yellow Onion

1 Package of Bob’s Red Mill Baking & Biscuit Mix

1 Package of Bacon or Sausage, etc
Instructions

Preheat oven to 350 degrees

Spray your pie dish with cooking spray. I used the deep dish pie baker from Fiesta Dinnerware

Grate your four medium potatoes with a grater. Brown them slightly in a pan and salt and pepper to taste. Place in pie pan like you would dough.

Chop and brown onion

Prepare Bob’s Red Mill Biscuit mix as directed. The recipe for the Rosemary Cheddar Biscuits was on the back of the bag. (This was a last minute decision on this recipe that made all the difference in my opinion). However, if it’s not on the back of your bag when you purchase, just add 1 cup of grated cheddar cheese, 1-2 TBsp. of fresh rosemary, ½ tsp of salt, 2 TBsp. of sugar and 1TBsp. of garlic. Set aside

Chop Brunch Pie meat and set aside

Mix your eggs and onion and meat together

Place mixture in pie pan

Roll out biscuit dough into 4 large biscuits, then add to the top of pie and connect the dough creating a pie top with the biscuit mixture

Bake at 350 for 20-25 minutes
